What about using rEFInd instead of Grub2?
I did it in the past for Next64; here is the console ISO.
I was able to boot with the current-core64.iso
I got grub screen and it booted into slitaz.
I burned it to a flash drive and it worked.
My laptop is a hi res screen so font was very small.
I changed it to 1920x1080 so I could read it.
I had to do this all with keyboard because I had no touchpad.
Do you include touchpad drivers?
Also when I changed the resolution and saved it, it didn't save it.
When I rebooted I didn't have 1920x1080. It was 3840x2160.
But this is progress.
I am guessing file system installed is read only.
I can't see how to edit my post here so here is some more questions.
It appears as if slitaz runs in memory. That would be why it didn't save any changes to my flash drive. Is there a way to save the changes?
Also I am in USA. My keyboard for US isn't quite correct.
Example the letter 'a' comes out as 'q'.

Yes, filesystem is read-only, it's same as cdrom, and load as ram.
I test on my pro laptop that only uefi (HP G7 Elitebook)
Infact touchpad not work :(.
We have already xorg-xf86-input-synaptics on core64, i check with Ubuntu 20.04 LTS running.
I see with xinput synaptics Touchpad, but driver used seem hid-multitouch, don't present in kernel config (not set), check to add this and test.
Concerning keyboard, that strange normally it's work.
My system is HP Spectre x360 Convertible 15
Maybe I selected the wrong keyboard on startup.
I just used the defaults.
I will be happy to test anything if you want me to.

One more thing How do I get wifi to work?

Damn,
I build i2c-hid, hid-multitouch, but touchpad won't work.
Retest with boot on Ubuntu to ensure not forget modules, if rmmod i2c-hid, touchpad not move, if modprobe move again.
Concerning your wifi card, think you need ucode for iwlwifi.
On my G7 need iwlwifi-cc-a0-59.ucode, for your card "Intel Comet Lake PCH-LP CNVi WiFi driver" seem need "iwlwifi-QuZ-a0-hr-b0"

I also rebuild iso, when test wifi see wpa_supplicant failed to run because miss libssl 1.1 and libcrypto 1.1.

I like the idea of a rolling release that I can install once and just update.

I put ubuntu kernel + modules on my usb key, and edit grub to boot them with SliTaz Current.
Touchpad work, in case our Xorg stack / synaptics not root cause.
Need to continue check diff between ubuntu kernel / slitaz kernel and found options that include in kernel to detect touchpad, infact if not forgot, we have same modules load (i2c_hid, hid, hid_multitouch, hid_generic)
For you touchpad, can you please put result of "xinput" ?
In my case, for Ubuntu see at SYNA30B1:00 06CB:Touchpad
and PCI ID 06CB:CE07
Technically you can install on usb key but keep in mind that flash wear for write access.
Also at time tazinst don't have support to install grub2 or grub2-efi, also same for separate /boot.

Continue to fight with touchpad, go to deep inside kernel module to understand.
Not directly related to touchpad, i put amdgpu as module on kernel, 'black screen' with Xorg, and see on dmesg need amdgpu firmware, with it, Xorg happy and glxgears also ~3300 frames in 5s, ~600 FPS ^^

If understand big miss part is PINCTRL_AMD, infact all other stuff about I2C / HID has already set in my step by step work to have touchpad work.
Big strange it's that with I2C/HID, see device on /sys for SYNA30AF but nothing for 06CB:CE07 (aka touchpad).

I launch rebuild it on my local wok to create new iso and test it before push.
In case AMDGPU as kernel mod implied that include firmware-amdgpu, need check final iso size.
Test with vmlinuz and modules-5.10.214.gz (to have modules/firmware) on my EeePC seem no impact/diff with actual 5.10.214.
At least think only need for core64, infact AMDGPU is for Graphics Core Next (GCN) architecture.
Not need to include them on linux / linux-pae.

Below usb key with new iso i tested, compare to actual iso, increase of 10Mo (due of 60Mo for amdgpu).
Need to rebuild iso, infact all stuff done on live, i'm forgot to saved iso after dd on usb and real test.
To not depend of fbefi, need xorg-xf86-video-amdgpu :)

Below test on qemu, yes inside SliTaz with kvm (i build 6.2.0 + pick OVFM.fd from ubuntu 20, embedded version in receipt is too old).
