Hi oui,
Strange.
gvim packed with custom .desktop file, you can found its icon under Applications Menu → Accessories:
Desktop file is /usr/share/applications/gvim.desktop
You can edit it as root. For example, you can remove deprecated line "Encoding=UTF-8", then save, then open Applications Menu → Accessories and wait few seconds, icon should appear.

Looking souce files (for known letters :) something about spell checker. Found in the src/spell.c:
* Why doesn't Vim use aspell/ispell/myspell/etc.?
* See ":help develop-spell".

I did use again my first big install from SliTaz slitaz-rolling-core64.iso 23-Aug-2015 01:03 45M
In that installation, the icon for Gvim is present (nothing to do)
In the other small installation made because of difficulties with the big one, it was not present!
Why? I don't know...

Can you check the .desktop file existence:
ls -l /usr/share/applications/gvim.desktop
And start gvim not using .desktop file using terminal:
gvim
