Italian locale isn't installed on the slitaz-next-170930.iso Live CD.
Locale de_IT is a part of the package "locale-de-base" installed on the Live CD: http://cook.slitaz.org/next/slitaz-i18n/files#locale-de-base
I have not exactly that ISO at the hands, but I booted into something similar.
There's the pictures that will help you to install and choose Italian locale for Italy.
Note, you need an active Internet connection to recharge the lists and to download the package.
1. Press "Manage" button:
2. If you have blank window like me, press "Recharge list":
3. Close the small window after the list recharged:
4. Select (and/or unselect) the locales you need (or don't need) and then press "Install/Remove":
5. After the locale packages completely installed and/or removed, close the small window:
6. Now you can choose locale you need:
Alternatively, you can install the package in the terminal (you should become root at the beginning):
tazpkg -gi locale-it
And then Italian locale will appear in that list.

I have manual installed this iso, and the locale Italian, after setting locale.conf basical work (menu icon and other).
Anyway for the future whitout internet connection I remember your tricks.
